( V5 Q6 L0 z: a牛排的烹调方式有煎(Grill)与烤(Roast)。Grill是烤架的意思,将牛排放在炭火上直接加热叫做煎,把牛排放到烤箱里加热叫做烤(Roast)。

煎的时间不超过4分钟。外表有烤焦痕迹,里面肉质呈现原来红色,但入口有热度。切开时还有血水渗出,但是肉质极嫩,口感多汁。1 }+ e/ S+ C* \% k4 ]# c: u
Medium Rare:中生

煎的时间6~8分钟。外表有烧烤过的痕迹,但是里面已经全面加热,可以感受到相当热度,但是肉质还是呈现红色。切开时还有稍许血水渗出,但是肉质嫩,口感多汁。- A" b8 p5 L7 ^
Medium:稍熟

2 M9 q# v& x7 l0 o9 o/ A马铃薯:Mashed Potato(马铃薯泥)或Baked Potato(烤马铃薯)、French Fries(马铃薯条),三者择一:前食用时可加肉汁调味;后者食用食用刀切开,可以涂上少许牛油(Butter )或食盐调味。
