6 i7 \0 F4 X' G0 K7 i6 R. L牛排的烹调方式有煎(Grill)与烤(Roast)。Grill是烤架的意思,将牛排放在炭火上直接加热叫做煎,把牛排放到烤箱里加热叫做烤(Roast)。

Very Rare:极生
3 V" Y% M% P4 T \煎的时间不超过3分钟。外表有烧烤过的痕迹,但是里面还是冷得几乎没有受到热度,切开时还有血水渗出,但是肉质极嫩,口感多汁。+ _& K# Q" V7 ^; d
Rare:生& r: z5 Y% U) d! f. | p( T
煎的时间不超过4分钟。外表有烤焦痕迹,里面肉质呈现原来红色,但入口有热度。切开时还有血水渗出,但是肉质极嫩,口感多汁。

' E4 F+ F" ~7 Q( M 3 t8 v, d, ~& E, I! H( t, z
煎的时间6~8分钟。外表有烧烤过的痕迹,但是里面已经全面加热,可以感受到相当热度,但是肉质还是呈现红色。切开时还有稍许血水渗出,但是肉质嫩,口感多汁。, o7 Z& Z# A' M! W
Medium:稍熟5 X5 |0 h* S* T$ {4 M9 l9 r
煎的时间8~10分钟。外表烧烤呈深褐色,但是里面除了中间部分呈现粉红色外,外围部分呈现烧烤过的淡褐色。切开时流出褐色肉汁,需要咬上数口才能咽下。% a1 G" \1 h! p* }- ?
Medium Well:稍熟

非大众化的牛排馆供应由厨师自制的牛排酱汁,如蘑菇酱汁(Wild Mushroom Source)或者黑胡椒酱汁(Black Pepper Sauce),A1牛排酱Heinz牛排酱蘑菇酱汁黑胡椒酱汁。
